Sim Sarshe Jhal or Hyacinth Beans in Mustard Gravy

In my childhood days I used to run away from vegetables and my mother used to tell me the nutrition values of vegetables. But never actually listened to her, except cauliflower and cabbage but not more than that. But slowly I started to have few of the vegetables. Apart from all the vegetable I never liked to have Sim or Hyacinth Beans, because I never found it tasty. But my mom used to cook it so nicely and I prefer to taste the gravy only.

Today I prepared some Sim Sarshe Jhal or Hyacinth Beans in Mustard Gravy. The recipe is very easy and perfect with steamed plain rice. Try it once I am sure your family gonna love this.

Ingredients:
1.Sim or Hyacinth Beans: 500 gm.
2.One large chopped tomato.
3.Three to four split green chilies.
4.Two table spoon mustard seeds.
5.Pinch of Panch foron (mixture of kalonji, fenel seeds, jeera, methi, mustard seeds)
6.Half tea spoon turmeric powder.
7.Salt and sugar as per taste.
8.Mustard oil for cooking.


Process:

First cut the edges of the hyacinth beans and cut form the middle.

Now make a smooth paste with the mustard seeds and water, now through the help of a tea strainer drain it so that the pulp of the mustard seeds can apart from the paste.

Now in a vessel add the mustard oil allow it to hot, now add the paanch foron allow it to crackle now add the chopped hyacinth beans, green chilies and the tomatoes with some salt sugar and turmeric powder. Fry it for some time or till the beans fried properly and the tomatoes stars melting.

Now add the mustard paste and mix well, Cook this in low flame with the lid for 10 to 15 mints.


Now turn the gas off and serve the easy SIM SARSHE JHAL with plain rice.
